GEAUX BLUE!

The University of Michigan is playing Virginia Tech in the Sugar Bowl later today…

In honor of this great occasion I decided to make a casserole.  I know not the most distinguished of meals, but it’s cold and I needed to use up turkey.  Also I got to use my UofM pasta!

Cute, right?

Okay so in the mix:

 turkey (obviously) I had about 2 cups

16oz bag of pasta

8oz (about) greek yogurt

4 T spinach artichoke hummus

1/4 c. romano/parm cheese blend

1/4 c. cheddar cheese blend

1/2 a bunch of asparagus

1/2 c. of broccoli

salt and pepper to taste

Boil the pasta for 6 mins or so.  You don’t want it to be all the way done because you are sticking it in the oven.  I chopped up the turkey and asparagus into bite size pieces and basically mixed everything else together in a bowl.

Appealing, right?

 

Once the pasta was done, I mixed everything together, put it in a buttered 8×8 dish and stuck it in a 350 oven for 30 mins. 

The result?  A tangy, creamy, good way to use leftover turkey casserole.  I know I still need to work on the name.  I was pretty surprised that it tasted so good.  I even went back for seconds!

GO BLUE BEAT THE HOKIES!!  And seriously, they better.  I live in Hokieland and do not want to be embarrassed by 9 and 6 year olds tomorrow…
