I’ve died and gone to strawberry heaven

It has been a great weekend.  Definitely what I needed after the crazy week at school.

Saturday we went strawberry picking.  I was so excited about this!  My mom would take my brother and I strawberry picking every summer in Michigan.  We went to Cullipher Farms in Virginia Beach.  We chose this particular farm because they have organic strawberries.

They gave us big green baskets that we could fill up for $13.50, not a bad price for the amount of organic strawberries we got.

So what to do with an abundance of strawberries?  Strawberry freezer jam of course!

Step 1: crush up strawberries so that it equals 4 cups.

Step 2: Mix in pectin and 1 1/2 cups of sugar.  We used Ball Freezer Jam pectin.  Let sit three minutes.

Step 3: Pour into freezable containers and wait for 30 minutes

Step 4: Put in the freezer!  We also put a couple in the fridge so we could enjoy it sooner than later.  It is delicious!

Since we had so many strawberries still, we made a strawberry rhubarb crisp!


Today Leanne, Phil, and I went to the Norfolk Botanical Gardens to get some training in.  If I forgot to mention, Leanne, Phil, and I are going to do the Williamsburg Run for the Dream half marathon next weekend.

It is a beautiful place.  A lot of flowers were in bloom, including pretty much the entire rose garden.

The other exciting thing about the botanical garden is that there is an eagle nesting there.  Guess what!?  We saw it!  It was awesome!  The eaglets are somewhere else.  A sad thing happened about 2 weeks ago, their mother got hit and killed by a plane.  The father eagle was not able to care for them, so they moved them to a wildlife center.  Check out this website to learn more.

After all of our walking, stopping to smell the roses, and eagle watching we were pretty hungry.  Why not head over to the church festival for some food!?  Good idea.

The one part of the meal you don’t see are the scrumptious lumpia we ate.  They. Were. Good.  I think it helped that they were pretty authentic.  They were eaten to fast to have their close up.

Sadly, the weekend is coming to an end.  SOL testing is creeping closer and closer, but so is the end of the school year. 🙂
